In my opinion, do mention the name of that specific professor... there's absolutely nothing wrong with being frank , but try to also include some statements that show more general interest... something like:
xxxxx, yyyyy and zzzzz are among my preferred areas of interest. I especially found a high level of similarity between my interests and researches conducted by Dr. aaaa, Dr. bbbb and Dr. cccc. I welcome the opportunity to work with other professors who might be interested in my application though.
But be extremely cautious; they (very easily) check all SOPs to detect copy-paste patterns by a software that is constantly being updated with new SOPs... so make sure not to plug in exact same words. This is considered VERY seriously here and can simply lead to your rejection.
And don't worry about low GRE scores too much.
