that's a bold statement! how did you come up with this "notion" of "application process" of yours? weekly sessions? nope! from what I know there's a grad committee for each department which has ONE faculty member making the final decisions, and a couple staff membera (afrade dun paye!) which do the preliminary steps (connecting applicants about missing documents, rejecting very awful cases, sending the results of admissions,...)
I just wanted to say "do not take things overkill serious"!
They do not really care about admission procedure "that much", because even if they choose their students solely based on: best GPA and GRE, they will get what they need for their research and don't forget: "unha kareshun hich vaght roo zamin neminune!" and as you know it's not them that need us but exactly opposite!
Even best SoP on earth will not get you in if you don't have enough GPA/GRE.
But your answer:
0. Do you REALLY find eight professors in the same university in the same field, with the same "focus"???????
1. Do what they say, if they said include name of the professor, do it.
I don't think if another professor sees it, will take it personal that "why didn't he/she talked about me ;("!
So chances are, no matter how improbable, the one you did not name and has fallen in love with your documents! finds a way, fights through all department procedures and gets in touch with you!
But once again they are not crazy about students that have not even met! It's us that are crazy about them!
2. Be realistic: I have never encountered a single university that has like 8 professors working on the same field, with a level of "focus" that a PhD work needs.
For example "Applied EM" group of eecs.umich has like 10 or more faculty members but each of them has a "special focus" that makes it difficult and a little ridiculous to state that I'm interested to works of even 3 of them concurrently! This way you actually are writing Statement of No Purpose! Or Statement of I just wanna be there!
3. You can still write more wisely and write something like:
general research carried out at "Applied EM group" (for example) is truly amazing and each professor has something unique to bring to the field, in particular I have a personal admiration for works of professors: 1 2 3.
still you see that it doesn't sound that "wise". So I recommend that you either do not write or if you write, do not include more than 2 professors, because, like I said, it WILL sound more like SoNoP.

About mentioning professors at each grad school: doing this will portray you as someone "who has done her homework," as someone who is genuinely interested in the field, enough to have done some prefatory work in that area. Don't just mention their names (anyone who can browse a web site can do that). Say something of substance about each professor by name, something that reveals you know and appreciate that person's work. Don't necessarily pick the most famous professor at the grad school; chances are many other applicants will do the same, and the admissions committee members will soon be unconsciously filtering those mentions out. (Besides, the most famous professor doesn't always work with all graduate students or may be out of town half the year, and you may come off as naive if you say you're looking forward to working with her.) Find a lesser-known professor whose work truly intrigues you (and truly is the operational word here). Then say something about what you know of that professor's work — remember that person may be on the admissions committee. Don't suck up — don't be a sycophant. Be fair and honest.
